Desi’s Vegetarian Meatloaf

No GravatarThis is my recipe for meatloaf, with NO meat!

Ingredients

  • 1 pkg 12oz Boca Ground Crumbles  (if you can’t find boca crumbles which they sometimes have at Albertson’s then get the morningstar brand which isn’t quite as tasty)
  • 1 slice of bread crumbled up for breadcrumbs
  • Handfull of Onion Sunchips (or other chips/crackers) crumbled up
  • 1/2 an onion or 2-4 shallots chopped finely
  • 2 beaten eggs
  • 1/4 tsp dried parsley, sage, garlic, thyme, basil, oregano, and/or dill weed
  • 2 tbs bbq sauce
  • 1/2 cup ketchup

meat-loaf-ck-549823-lHeat oven to 350. Microwave crumbles for 1-2 minutes. Add all ingredients but ketchup. Mix. Shape into loaf (in a loaf/bread pan), top with ketchup. Bake 35-40 minutes.

Notes:

For the herbs I like to add a dash of each, but it can be any of them (I am a big fan of herbs). I like the jack daniel’s bbq sauce it is delicious. The meatloaf will have a bit more of a garlic flavor if shallots are used.

This looks good! I’m looking forward to trying it. I found one recipe for veggie meat loaf and it has walnuts and pine nuts(which are spendy) and I don’t really like a meatloaf with hard or crunchy bits in it…and I have trouble getting just the right moisture to filler ratio.

Thanks! I’ll have to post how it was when I make it. I’m always looking for easy, BASIC ingredient vegetarian recipes to slowly reduce our meat intake.

Meat just plain bogs me down…like it has more tryptophan than turkey! I just never was one to drool over slabs of bloody red meat. Last summer, there was this really cool neighborhood meatloaf street “festival” up by the middle school…I bet a recipe like this would be a prize winner.

I had always thought if Les Schwab gives away free beef with the tires you buy, Commercial ought to give away free veggies from local growers…Ha!
